Fish
I regularly travel to Billingsgate Market to obtain the best fresh catch I can for our customers. Sustainable fishing is a very important part of my food ideals, and the best quality fish can only be obtained at such markets as this.

Meat 


I travel weekly to Smithfield Market to obtain some of the finest meat around. Over the past years I have established relationships with the best suppliers at this market, so I can always reserve and obtain the finest meat.
 







 
I am a great advocate of local sources, and from time to time we use a great local supplier of meat aswell; Flexmore Farm in Chalfont St Giles for Berkshire pig, Water Buffalo, and rare breeds of poultry and water foul.

 

 

 


Fruit & Veg 


Lastly on the market side of things, we obtain most of our fruit and veg from Spitalfield market, purely because there is the greatest selection of fresh fruit available here.
